Ingredients

  • 1 lb Ground chicken breast
  • 1/3 cup Celery Minced
  • 1/4 cup Bread crumbs (I used chickpea crumbs to make the recipe gluten-free and for extra fiber/protein from Watusee Foods, but you can use any bread or panko crumbs you'd like)
  • 1/3 cup Carrots Minced
  • 1 each Egg
  • 2 tbsp Buffalo hot sauce *I use a brand called Wing Time purchased at Whole Foods
  • 2 tbsp Scallions Minced

Instructions

  • Preheat the oven to 375 F
  • Mince celery, carrots and scallions
  • Add ground chicken meat to a mixing bowel and mix with 1 egg
  • Mix in additional ingredients with your hands (celery, carrots, scallions, hot sauce and bread crumbs)
  • Roll meat into ~16-18 mini meatballs (about 1.5 inches each)
  • Bake in the oven for ~25 minutes at 375 F
