
Ingredients
- 1 lb Ground chicken breast
- 1/3 cup Celery Minced
- 1/4 cup Bread crumbs (I used chickpea crumbs to make the recipe gluten-free and for extra fiber/protein from Watusee Foods, but you can use any bread or panko crumbs you'd like)
- 1/3 cup Carrots Minced
- 1 each Egg
- 2 tbsp Buffalo hot sauce *I use a brand called Wing Time purchased at Whole Foods
- 2 tbsp Scallions Minced
Instructions
- Preheat the oven to 375 F
- Mince celery, carrots and scallions
- Add ground chicken meat to a mixing bowel and mix with 1 egg
- Mix in additional ingredients with your hands (celery, carrots, scallions, hot sauce and bread crumbs)
- Roll meat into ~16-18 mini meatballs (about 1.5 inches each)
- Bake in the oven for ~25 minutes at 375 F
